  Lumps of Coal

  Ingredients

16 oz. package Oreos

8 oz. Cream cheese

 

Instructions

Mash Oreos until finely ground. Combine oreos with cream cheese. Mix until all is black and roll into lumps. Chill for 20 minutes.

Healthier version: Replace Oreos with Newman’s Organic cookies. Replace cream cheese  with Philadelphia ⅓ less fat cream cheese.

Buckwheat CakesBuckwheat Pancakes

Ingredients

2 cups buttermilk

1 ½  cup buckwheat flour

1 tablespoon sugar

1 teaspoon baking soda

½ teaspoon salt

½  tablespoon unsalted butter

Optional add ins- 1 egg, cinnamon oil, chocolate chips, blueberries,

Instructions

Mix all ingredients except the buttermilk. Slowly pour in the buttermilk until you’ve reached the desired consistency. Pour onto hot, greased skillet and flip once bubbles arise.

Pepperoni Rolls  Pepperoni Rolls

  Ingredients

Crescent rolls

Pepperoni (sticks or slices)

Mozzarella cheese (grated, slices, string cheese)

Demus Peppers (optional)

  Instructions

Grease baking sheet and lay out crescent rolls. Place 3 sticks or 6 slices of pepperoni on each roll. Sprinkle about 1 tablespoon mozzarella or place ½ round slice on each roll. Bake as crescent roll package instructs. Once out of the oven, add Demus Peppers and more cheese if desired.

Healthier version: Replace crescent rolls with pita. Replace pepperoni with turkey pepperoni. Replace cheese with nutritional yeast.

 Apple ButterSlow Cooker Apple Butter

YIELD: 4 pints   PREP TIME: 30 minutes   COOK TIME: 12 hours

Ingredients

6 1/2 pounds apples – peeled, cored and sliced

1 cup granulated sugar

1 cup light brown sugar, lightly packed

1 tablespoon ground cinnamon

1/2 teaspoon freshly grated nutmeg

1/4 teaspoon ground cloves

1/4 teaspoon salt

1 tablespoon pure vanilla extract

Instructions

1. Place the apples in a slow cooker. In a medium bowl, combine sugars, cinnamon, nutmeg cloves and salt. Pour the mixture over the apples and mix well.

2. Cook in slow cooker on low for about 10 hours, stirring occasionally, until the mixture is thickened and dark brown.

3. Uncover, stir in vanilla and continue cooking uncovered on low for about 2 hours.

4. Use an immersion blender to puree the apple butter until smooth.

5. Spoon the mixture into sterile containers, cover and refrigerate for up to two weeks or freeze.

Ramp Pesto Pasta  Ramp Pesto Pasta

  Ingredients

10 ramps chopped

1/3 C olive oil

3 drops Rosemary Oil

1 oz ricotta salata

1/2 tsp salt

black pepper to taste

lemon wedges to make it pretty

16 oz of your favorite pasta cooked according to package directions

 Can’t find ramps?  Try substituting with leeks or green onions plus a little chopped garlic.
